Potlatch Pilaf Cooking Instructions

How to prepare the basic grain to use as a side dish or base for other dishes.

Ingredients

  • 1 cup Bluebird Potlatch Pilaf
  • 2-2 1/4 cups water or stock
  • pinch salt

Methods

Stovetop Instructions
  • Saute 1 cup of dry Bluebird Potlatch Pilaf in 1 TBSP olive oil with a pinch of salt.
  • Add 2 1/4 cup water or stock and bring to a boil.
  • Reduce heat and simmer, covered for 35-40 minutes (more for softer grains) or until grains reach desired tenderness.
  • Remove from heat and let stand for 10 minutes, covered.
Rice Cooker Preparation
  • Combine 2 cups of water or stock with 1 cup of Bluebird Grain Farms Potlatch Pilaf.
  • Cook on white rice setting.

Old World Cereal

Basic preparation of Bluebird Grain Farm's Old World Cereal

Ingredients

  • 1 cup Bluebird Old World Cereal Blend
  • 3 cups water (can use milk but you need to pay more attention when cooking!)
  • pinch salt

Methods

Stovetop Preparation
  • Combine 1 cup of Bluebird Grain Farm's Old World Cereal blend with 3 cups of water (or milk if desired) and a pinch of salt in a saucepan.
  • Bring to a boil, stirring frequently.
  • Reduce heat and simmer, stirring frequently for 12-15 minutes or more for more tender cereal.
Overnight preparation
  • Combine Bluebird Old World Cereal and water or milk and let sit overnight (in the fridge if using milk).
  • Heat in the morning with a splash more of liquid. Stir until it reaches desired temperature and enjoy.

Emmer Pancake and Waffle Mix Recipe

Basic instructions for preparing our Pancake and Waffle Mix

Ingredients

  • 1 cup Bluebird Emmer Pancake and Waffle Mix
  • 1/3 cup milk or plant based milk
  • 3/4 cup buttermilk May replace with yogurt or add 1 Tbsp. vinegar to 3/4 cup milk
  • 1 large egg May use 2 eggs for added protein
  • 2 Tablespoons unsalted butter melted, or use vegetable oil

Methods

  • Mix together wet ingredients. (eggs, milk, buttermilk, and butter)
  • In a medium bowl, mix wet ingredients into 1 cup of pancake mix.
  • Whisk together but don't overmix.
  • Let sit for 5 minutes for the batter to absorb the moisture.
  • Heat griddle. Brush with oil or butter, add 1 scoop of batter. Flip when surface starts to bubble and cook through.
  • Serve with your favorite toppings.
  • Follow same instructions for waffles but cook in a waffle iron!

Basic preparation for Bluebird Einka and Lentils

Ingredients

  • 1 cup Bluebird Einka & Lentils
  • 1 3/4 to 2 cups water or stock
  • pinch salt

Methods

Stovetop Preparation
  • Combine 1 cup Bluebird Einka & Lentils with 2 cups of water or stock and a pinch of salt.
  • Bring to a boil.
  • Reduce heat and simmer for 25 minutes or so until grains reach desired tenderness.
  • Remove from heat, cover and let stand for 5 minutes. Drain any excess water.
  • Enjoy as is or in your favorite side or salad recipe.
Einka & Lentils prepared in a Rice Cooker
  • Combine 1 3/4 cup water, 1 cup Bluebird Einka & Lentils and a pinch of salt in your rice cooker.
  • Set on White Rice Setting and cook to completion.

Basic Preparation for Bluebird Grain Farms Cracked Farro Porridge

Ingredients

  • 1 cup Bluebird Cracked Farro Porridge
  • 3 cups water
  • pinch salt

Methods

  • Combine 1 cup Cracked Farro Porridge with 3 cups of water (or milk if you want creamier cereal) and a pinch of salt in a saucepan.
  • Bring to a boil, then reduce to a simmer and cook, stirring frequently for 12-15 minutes. Add more liquid if necessary.
Overnight preparation
  • Combine 1 cup Bluebird Cracked Farro Porridge with 3 cups of water or milk and a pinch of salt. Let sit overnight (in the refrigerator if using milk)
  • Warm up in the morning, adding a splash of liquid for desired consistency.
Savory Cracked Farro Polenta
  • Combine 1 cup of Cracked Farro Porridge with 3 cups of stock and a pinch of salt.
  • Bring to a boil and simmer, stirring frequently for 12-15 minutes.
  • Remove from heat and spread on cookie sheet at 1/2 inch thickness.
  • Cool and cut into 2"X4" rectangles
  • Pan fry in oil and butter and serve with favorite topping (tomato sauce etc).

Ingredients

  • 1 Cup Bluebird Whole Grain Emmer
  • 2 1/2-4 Cups Water or Broth
  • Pinch of Salt

Methods

To Prepare on the Stovetop
  • Combine 1 cup of Bluebird Whole Grain Emmer Farro, 4 cups of water and a pinch of salt in a saucepan.
  • Bring to a boil and boil for 5 minutes stirring frequently.
  • Cover and reduce heat to a simmer. Cook for 50-60 minutes until grains reach desired tenderness (cook longer if you like a softer grain!).
  • Drain any excess liquid and enjoy warm or cold in many dishes.
Whole Grain Emmer Farro in Rice Cooker
  • Combine 2 1/2 cups water with 1 cup Bluebird Emmer Farro and a pinch of salt in your rice cooker.
  • Set rice cooker to brown rice setting and cook until done.
To prepare in a Pressure Cooker
  • Add 1 cup Bluebird Whole Grain Emmer farro, 2 1/2 cups water or stock and a pinch of salt to a pressure cooker or multi-functional cooker. Secure the lid and set the cooker to "High Pressure" mode.
  • Cook on high pressure for 10 minutes.
  • Once cooking is complete, let the pressure release naturally for about 8-10 minutes.
  • Carefully release any remaining pressure using the vent, then open the lid. Drain off excess liquid.
