
Ingredients
- 1 cup Bluebird Emmer Pancake and Waffle Mix
- 1/3 cup milk or plant based milk
- 3/4 cup buttermilk May replace with yogurt or add 1 Tbsp. vinegar to 3/4 cup milk
- 1 large egg May use 2 eggs for added protein
- 2 Tablespoons unsalted butter melted, or use vegetable oil
Methods
- Mix together wet ingredients. (eggs, milk, buttermilk, and butter)
- In a medium bowl, mix wet ingredients into 1 cup of pancake mix.
- Whisk together but don't overmix.
- Let sit for 5 minutes for the batter to absorb the moisture.
- Heat griddle. Brush with oil or butter, add 1 scoop of batter. Flip when surface starts to bubble and cook through.
- Serve with your favorite toppings.
- Follow same instructions for waffles but cook in a waffle iron!
