Many folks with gluten sensitivity find that ancient wheat is easier to digest because of its “weaker” gluten structure. The ancient genetics of these wheat species produces gluten protein that can be more easily digested.
All these flours can be used in any recipe calling for whole wheat flour in a 1:1 ratio. You may find you need more liquid as whole grains absorb more liquid depending on the recipe and your climate.
Protein contents vary year to year based on the growing season. Emmer protein ranges from 13.5-17%; Einkorn protein ranges from 16-18%; Spelt ranges from 12-16%.
