Our organic Rye can be cooked as a whole grain (in 40-50min), as a hearty breakfast cereal or ground in your own mill for the freshest rye flour available. Rye is unusual among grains for the high level of fiber in its endosperm and bran. Because of this, rye products generally have a lower glycemic index than products made from wheat and other grains, making it especially healthy for diabetics. Rye can also be sprouted to use in salads and on sandwiches.
On stovetop, add 1 cup of rye berries to 3 cups of water with a pinch of salt. Bring to a boil and simmer, stirring occasionally for 40-60 minutes or until desired tenderness is reached. Drain excess water.
Rye berries can also be cooked in a rice cooker on the brown rice setting.
One cup makes 3-4 servings.
