A Mediterranean inspired handcrafted blend of whole grain Einkorn and peppery French lentils that yields a full bodied, wholesome side dish or vegetarian main. Toast blend in olive oil and cumin, add liquid (stock or water) and cook with roasted tomatoes. Top with fresh lemon juice, cilantro, and feta cheese. Or serve cold: combine cooked blend with chopped fresh kale, chard, or spinach, roasted red peppers, chickpeas, red onion, and toss with a lemon tahini dressing. Cooks in 25 minutes.
On stovetop, add 1 cup Einka & French Lentil blend to 2 cups of water or stock with a pinch of salt. Bring to a boil. Simmer on low, covered for 25 minutes. Turn off heat. Let stand for 5 minutes. Serve hot or cold.
This can also be cooked in a rice cooker using the white rice setting.
One cup makes 3-4 servings.
