Our Washington Heritage Rye berries are sent through our hammermill for a medium-cracked fiber rich product. The earthy smoky flavor of our heritage rye is perfect in breads, crackers, and hearty breakfast bowls. Stovetop cooking time is 15-20 minutes. Many of our customers use our cracked rye and rye flour in their sourdough starter. Rye is unusual among grains for the high level of fiber in its endosperm and bran. Because of this, rye products generally have a lower glycemic index than products made from wheat and other grains, making it especially healthy for diabetics.
This variety of Rye, Tetra Petkus, has been grown in Washington State for over 100 years.
